Spaghetti Squash, Cucurbita pepo
A winter squash that makes a great substitute for pasta, without the carbs! Split in half and bake until tender, then scrape out the “noodles”. Delicious with garlic and parsley or cilantro, with a bit of Parmesan cheese on top!
